Yes, and no, because it also means a lot of other customs and aspects, including food. And the Bengali culture is no different. For the true Bangalis, food is a quintessential part of their everyday lives. Their thoughts revolve around the whats, whens and wheres of their meals, and their days are planned accordingly. Their ‘bajarer tholi’ represents not just their taste, and I don’t mean just their palate. Their platters have different stories to tell.

And, I have to say, I was pleasantly surprised!

Take for example Chitagong er Kosha Murgi. Do you know how this recipe came to exist? During the British period, the hungry sailors of the erstwhile Chattagram region used to cook a simple chicken recipe in the handi, by slow-cooking mutton, until the meat would become melt-in-your-mouth soft, with the gentle flavours of the spices. Even today, this recipe is still cooked to gain the succulence and the mild, and yet, sublime, flavours. Devour the Bangladeshi goodness on Saptami at Golden Tulip.

Then there’s the Victoria Gaja – ever wondered how the item got the name? Once Queen Victoria was invited to the Shobhabajar Rajbari, and the royal confectioner decided to put a twist to the commonly available Goja by soaking it in sugar syrup. You can get this dessert at Golden Tulip on Sasthi.

And, it’s not just the stories that make the recipes special. Even the traditions of cooking them make them special. Be it Rabindranath Tagore’s favourite Rajthakurer Kasha Hari which is first marinated for a day, and then slow-cooked without boiling, or the Chhana Bora which was a favourite at the Nawab’s darbar and also Netaji, and the Dal Raibahadur cooked with vegetables – it’s all going to be here. You can even dig into every Bengali’s favourite Sondesh, Baked Bundi, Bori Bhaja, Papads, Kabuli Chanar salad, etc.

For instance, instead of cooking a Muitha with Chitol fish, they have curated a Kaliya recipe to serve on Sasthi. Then there’s the Palak Chanar Kofta Curry which gets a North Indian touch as the Chhenna is cooked in a Spinach gravy instead of the common Bengali gravy of tomato. The old recipes have received a makeover in terms of names, as well as slight hints of innovations in recipes, techniques, marinations, etc.

The restaurant’s Pujo menu is as Bengali as one could imagine, with even the welcome drinks being authentically Bangali. To add a little more variety to the menu, Golden Tulip will also make some Oriental and Continental items available. Because, let’s face it, we Bangalis love food, from different parts of the world.
