Punjabi Food Sans Biriyani: The Philosophy behind the New Menu of Rang De Basanti Dhaba

Punjabi Food Sans Biriyani: The Philosophy behind the New Menu of Rang De Basanti Dhaba!

We Kolkatans love to eat in big amounts. We love our meat, and dairy products. That’s why we love Punjabi food. Plus, the use of mustard oil is aways a plus. The result is that Kolkata is full of restaurants and roadside eateries that offer North Indian food. I’ve grown up eating rotis and tarkas, tandoori chicken and Biriyani, at least once every week. Biriyani, of course, is an emotion for Kolkata’s foodies, and no North Indian meal is complete without it. But, at the risk of getting attacked, I have to say that I am a little tired of the generic taste of what passes for Punjabi food in Kolkata. So is Chef Joardar, as much as I could understand while speaking to him during a bloggers’ meet to taste the New Menu of Rang De Basanti Dhaba. So, his food philosophy is to offer authentic Dhaba-style food to Kolkatans, sans Biriyani!

WELCOME DRINK:

Tadke Wali Chanch

We are all aware of chanch, but this one is a special kind. It has the flavours of tarka – you can actually bite into the roasted cumins, garlic pieces, coriander, etc. What’s even more unique is that it has the smokiness that’s common in food cooked in a tandoor grill. It isn’t your run-of-the-mill sweet fizzy beverage to cleanse your palate. You have to be a true lover of flavours to appreciate this drink. Plus, it’s good for your digestive system to start your meal with it.

STARTERS:

Pagware ka Murg

This was a dish of succulent chicken pieces which tasted deliciously spicy and tangy. They had a gentle crisp on the outside, thus giving the pieces an interesting texture. Plus, I found the bite-sized pieces quite convenient to handle.

Moong Dal ki Phillori

Served in a bowl of papad to soak up all kinds of moisture, these little balls of green-gram are deliciously crispy. And they stay nice and crispy for quite some time. Don’t forget to dip the philloris in the green chutney served with them.

MAINS:

Daal Angara

I feel surprised when I say that a baby T-rex such as myself liked a dal dish most! It was buttery smooth in texture,  and totally packed with flavours! And, it’s REALLY spicy, hence the fiery name. It’s best paired with roti or naan.

Paneer Lababdar

This was yet another beauty to taste, with creamy paneer pieces in a delicious gravy. I hate sweetness in my savoury dishes. But this one had just the right hint of it, thanks to the use of honey instead of sugar, to avoid the sickly taste.

Railway Mutton Curry

This looks like a rich, oily mutton curry, but trust me, it’s not. It’s really light, almost like a homemade Bengali jhol. There was no feeling of fullness after having it. Perhaps, I would’ve liked the flavours to be slightly stronger, though.

Methi Chicken

I think the flavours of methi saag and chicken make a great team, and once again, the RDBD version of the dish didn’t disappoint me. Melt-in-your-mouth, juicy chicken pieces with the aroma of fenugreek – totally delightful!

Veg Pulao

The veg Pulao on the new menu of Rang De Basanti Dhaba turned out to be absolutely different from Biriyani, as promised. It had no overpowering aromas of ghee or saffron, and was the perfect complement to the main dishes.

DESSERT:

Shahi Tukda

Our royal spread came to an equally regal ending with the Shahi Tukda. “Heavenly” is probably the only way to describe it. amidst all the creamy, milky goodness of the kheer, the bread layers still had a lovely crunch, every time I bit into them. This was because the bread pieces were first deep fried, and then layered with the stuffing with the beautifully sweet-and-spicy fragrance of cardamom. A simple dessert, yet so delectable – it’s a must-have at RDBD.
